Breaky omelette
Believe it or not I never used to eat breakfast!
I know INSERT ‘shock horror’. Terrible for a health professional to admit. But more on that another time.
I’m currently loving this really simple omelette with rocket and mushroom. I personally prefer rocket over spinach for two reasons. One being that I hate the taste of spinach, and two being that spinach can be very high in histamine and rocket is low in it. Histamine is something I try to be mindful of with my diet as I can have issues with my histamine levels, for some or most people this is ok.
Rocket is an awesome bitter to add to your meals as it assists and supports:
The liver with it’s elimination and detoxification process.
Bile production (which assists breakdown of fats and vitamin absorption.
Stimulation of the vagal tone, which is an essential tool in regulating your nervous system.
Improves digestion & nutrient absorption.
AND mushrooms are awesome because they are loaded in selenium and great for your blood.
OMELETTE RECIPE
Ingredients
Handful of rocket
1-2 mushrooms sliced
2 x eggs
1 tsp olive oil or butter
Pepper (to season)
Method
Heat olive oil or butter in fry pan.
Once dissolved, add the rocket & mushrooms to the pan for 1-2 mins so they can cook a little.
Whisk the eggs in a bowl and once fluffy pour over the ingredients in pan.
Once its cook on bottom flip half the omelette over and cook until eggs aren’t gooey or runny.
When it’s cooked through, add to your plate and season with pepper
Notes
I don’t use any milk or butter to add to my eggs but I’m sure you can add this if needed.
